Spanakopita Casserole

INGREDIENTS:

1 pound (about 450g) fresh spinach, washed and chopped

1 tablespoon olive oil

1 onion, finely chopped

3 cloves garlic, minced

8 ounces (about 225g) feta cheese, crumbled

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

4 eggs, lightly beaten

1/4 cup chopped fresh dill (or 1 tablespoon dried dill)

Salt and pepper to taste

1/2 teaspoon ground nutmeg

8 sheets phyllo dough, thawed if frozen

1/4 cup melted butter or olive oil, for brushing
