Peppers Stuffed with Ground Turkey and Lentils: Balanced and Delicious Meal

Prepare the lentils: Cook the lentils according to package directions until tender. Drain and reserve.
Prepare the peppers: Wash the peppers, cut off the tops, and remove the seeds and white pith.
Prepare the filling:
Heat the olive oil in a large skillet and sauté the onion and garlic until translucent.
Add the carrot cubes and sauté briefly. Add the ground turkey to the skillet and cook until crumbly and cooked through.

Mix together the tomato paste, chopped tomatoes, paprika powder, oregano and thyme. Season with salt and pepper.
Add the cooked lentils to the ground beef mixture and mix well. Cook briefly until the mixture thickens slightly.
Stuff the peppers: Stuff the prepared peppers with the ground beef and lentil mixture and place in a baking dish.
