1. Preheat your grill to medium-high heat.
2. Slice the zucchini or yellow squash and bell peppers into thick slices. Toss them in a bowl with olive oil, salt, and pepper to coat.
3. Grill the vegetables until they are tender and have nice grill marks, about 3-4 minutes per side. Remove them from the grill and set aside.
4. In a small bowl, whisk together Dijon mustard, honey, lemon juice, thyme leaves, salt, and champagne or apple cider vinegar to make the lemon thyme honey mustard dressing.
5. Cut the ciabatta bread into sandwich-sized pieces and slice them open horizontally.
