Preheat the Oven and Prepare the Pan:
Preheat your oven to 350°F (177°C). Grease a 9×5 inch loaf pan.
Whisk Wet Ingredients:
In a large bowl, whisk the egg, vegetable oil, granulated sugar, and brown sugar together until combined and smooth. Stir in the grated zucchini and vanilla extract.
Mix Dry Ingredients:
In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Combine Wet and Dry Mixtures:
Pour the dry ingredients into the wet ingredients. Gently stir until just combined; do not overmix. If using, fold in the nuts, raisins, or chocolate chips.
Bake:
Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
Bake for about 45-55 minutes, or until a toothpick inserted in the center comes out clean. If the bread is browning too quickly on the top, tent it loosely with aluminum foil.
Cool:
Remove the bread from the oven and set the pan on a wire cooling rack. Allow the bread to cool completely in the pan.
Serve:
Once cooled, remove the bread from the pan and slice. Serve plain, buttered, or with a spread of cream cheese.
