Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish or line it with parchment paper.
Cook the Spinach:
Heat the olive oil in a large skillet over medium heat. Add the diced scallions and sauté until soft, about 2-3 minutes.
Add the chopped spinach to the skillet, and cook until wilted, about 3-5 minutes. Remove from heat and let cool slightly. If there’s excess moisture, gently press the spinach to drain.
Mix the Dry Ingredients:
In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
Combine the Wet Ingredients:
In another bowl, mix the milk, lightly beaten eggs, and melted butter. Stir in the cooled spinach mixture.
Combine Wet and Dry Ingredients:
Add the wet ingredients to the dry ingredients and stir until just combined.
Add Cheeses:
Fold in the shredded mozzarella, crumbled feta, and grated Parmesan cheese into the batter until well distributed.
Bake:
Pour the batter into the prepared baking dish, spreading it evenly.
Bake in the preheated oven for about 25-30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the “brownies” to cool in the pan for about 10 minutes before slicing into squares.
Serve warm or at room temperature.
