Quick and easy chicken curry for weeknights

150 ml of plain yogurt
salt and pepper to taste

1 cup frozen vegetable mix

chopped fresh coriander, for serving

METHOD:
Heat a large, deep pan over high heat and add a drizzle of oil.

Brown the chicken on all sides, then remove and set aside.

Add the onions to the pot and let them soften for 5 minutes, then add the ginger, garlic and spices.

If the mixture is too dry, add another drizzle of oil and fry for 30 seconds.
