Paccheri with Spicy Calabrese Style Pork Ragu
Ingredients:
1 lb ground pork
1 lb hot Italian sausage, casings removed
1 lb sweet Italian sausage, casings removed
3 carrots, finely chopped
3 stalks celery, finely chopped
1 large onion, finely chopped
6 cloves garlic, minced
1/2 teaspoon chili flakes (adjust to taste)
1 cup chopped parsley
4 sprigs fresh rosemary
4 sprigs fresh thyme
1 can (28 oz) Tuttorosso crushed tomatoes
1 can (6 oz) Tuttorosso tomato paste
1 can (28 oz) Tuttorosso San Marzano style peeled pear tomatoes in juice with basil and sea salt
1 lb paccheri pasta
Salt and black pepper, to taste
1 tablespoon sugar
1/4 cup olive oil
1 cup red wine
1 cup grated Parmesan cheese
