Mexican Shrimp Cocktail

1. Boil some salted water in a pot. Once boiling, add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain them and put them in a bowl of ice water to cool down.

2. In a large bowl, mix together the tomato juice, ketchup, lime juice, and hot sauce until everything is well blended.

3. Cut the cooled shrimp into bite-sized pieces and add them to the bowl with the tomato mixture.

4. Put in the diced cucumber, red onion, and chopped cilantro. Gently toss everything together.

5. Carefully fold in the diced avocado, making sure not to mash it.

6. Season with salt and pepper according to your taste.

7. Cover the bowl and let it chill in the refrigerator for at least 30 minutes so the flavors can mingle.

8. When ready to serve, dish out the Mexican shrimp cocktail chilled. Garnish with lime wedges and have some tortilla chips on the side for scooping.
