Herb-Crusted Parmesan Meatloaf

This recipe’s got my husband coming back for more, no fail.

Herb-Crusted Parmesan Meatloaf

INGREDIENTS:

1 1/2 pounds ground beef (or a mix of beef and pork)

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko)

2 eggs, beaten

1/4 cup milk

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon dried thyme

Salt and pepper to taste

1/2 cup marinara sauce (plus extra for serving)

FOR THE HERB CRUST:

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs

1 tablespoon chopped fresh parsley

1 teaspoon dried oregano

1/2 teaspoon garlic powder
