Fruit Pizza Cookies

1. Make the Cookies:

• Preheat your oven to 350°F. Grease a half sheet pan lightly or line it with parchment paper.

• In a large bowl, mix together the cubed butter and sugar until they’re well combined. Add the egg, vanilla extract, and almond extract, and mix again.

• Gradually add the flour and baking powder, stirring until a dough forms.

• Roll the dough into balls about 3 tablespoons each, then press them slightly flat with a glass. Let them chill in the fridge for about 5 minutes before baking.

• Bake for 8-10 minutes. Let them cool on the pan for 5 minutes, then transfer them to a cooling rack to cool completely.

2. Make the Frosting:

• In a bowl, combine the room temperature butter, cream cheese, powdered sugar, and vanilla extract. Use a mixer to blend everything together until it’s smooth.

3. Assemble the Cookies:

• Generously frost each cookie with the cream cheese frosting.

• Top each frosted cookie with fresh fruit like berries, kiwi, banana slices, or mandarin oranges.
