Fried aubergine medallions: it’s a creative and stylish piece

Cut the aubergines into slices and begin assembling the medallions, starting with the cheese on top, then the ham and cheese. Cover it with another slice.
Prepare an egg mixture by mixing the eggs with the parmesan and seasoning with salt.
Dip the medallions thus prepared first in the flour, then in the egg mixture and finally in the breadcrumbs.
Fry the medallions in oil until golden brown on both sides.
