For a creamier dressing, you can cook the mushrooms in fricassee, removing them from the heat and seasoning them with a sauce made from egg yolks and lemon juice, or enrich them with a few spoonfuls of ready-made béchamel or to use at home while cooking.
Instead of Fontina, you can opt for Emmental, Asiago, smoked provola or any other cheese of your choice, or replace the crock with turkey bru.

To fully enjoy their fragrance, we recommend consuming the sandwiches with cooked ham, cheese and mushrooms warm and fresh. Alternatively, they can also be stored in the refrigerator, in an airtight container, for a maximum of one day.
