Begin by whipping 1 cup of the heavy cream in a mixing bowl until it forms firm peaks. Refrigerate this while you prepare the other components.
Heat the remaining 3/4 cup of heavy cream just until it begins to bubble, then pour over the chocolate chips. Wait for a minute, then stir until smooth to create your ganache.
Lay a layer of graham crackers at the bottom of a 9″ x 9″ baking dish.
Prepare the vanilla pudding according to the package instructions using the 2 cups of cold milk. Once done, fold the chilled whipped cream into the pudding carefully to keep it light and fluffy.
Pour half of the pudding mixture over the graham crackers in the dish, then add another layer of graham crackers on top. Pour the remaining pudding mixture over the second layer of graham crackers.
Finally, spread the chocolate ganache evenly over the top layer.
Cover and refrigerate the cake for at least 2 hours, or overnight, to allow the layers to set and flavors to meld.
