Chipotle Shrimp Avocado and Mango Rice Bowls
Ingredients:
For the Chipotle Shrimp:
1 lb Large shrimp, peeled and deveined
2 tsp Chipotle chili powder
1/2 tsp Paprika
1/2 tsp Ground cumin
2 cloves Garlic, minced
2 tbsp Lime juice
3 tbsp Olive oil
Salt and pepper to taste
For the Rice Bowls:
1 cup White or brown rice, cooked according to package instructions
1 Avocado, sliced
1 Mango, diced
1 cup Roasted corn (frozen or canned, or homemade)
1 Red pepper, diced
2 Green onions, thinly sliced
1/4 cup Fresh cilantro, chopped
1/4 cup Fresh mint leaves, chopped
1 Serrano pepper, thinly sliced (optional, for extra heat)
For the Dressing:
1 tbsp Lime zest
2 tbsp Lime juice
1 tbsp Mango jam
1 tbsp Tequila (optional)
3 tbsp Extra virgin olive oil
Salt and pepper to taste
