Black Pepper Chicken Stir Fry

Marinate the Chicken:

In a medium bowl, combine the chicken pieces with 2 tablespoons of soy sauce and 1 teaspoon of cornstarch. Mix well and let it marinate for at least 15 minutes.

Prepare the Stir Fry:

Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir fry until it is browned and cooked through, about 4-6 minutes. Remove the chicken from the skillet and set aside.

Cook Vegetables:

In the same skillet, add the remaining tablespoon of oil. Add the bell pepper and onion, and stir fry for about 2-3 minutes until they are just tender. Add the garlic and ginger, and cook for an additional minute until fragrant.

Make the Sauce:

In a small bowl, combine the 1/4 cup soy sauce, oyster sauce, black pepper, and sugar. Mix well.

Combine and Thicken:

Return the cooked chicken to the skillet with the vegetables. Pour the sauce mixture over the chicken and vegetables, and stir to combine. Add the cornstarch dissolved in water and stir continuously as the sauce thickens, about 1-2 minutes.

Garnish and Serve:

Garnish with chopped cilantro before serving.
