Place the boiled potatoes in a large bowl. Add the milk.
Add the flour, baking powder and salt and mix until a shaggy dough forms.
Work the dough, then let it rise for 1 hour.
Once risen, transfer the dough to a clean work surface. Sprinkle with flour and then roll it into a log.
Divide the dough into five pieces.
Roll out each piece with a rolling pin.
Cook each focaccia in the pan on both sides for 2-3 minutes or until golden brown.
Stack the focaccias on top of each other, making sure to brush each one with melted butter.
Sprinkle with chopped parsley before serving.
