Banana Bliss Roll Cake 

1. Preheat your oven to 375°F (190°C) and line a 10×15-inch jelly roll pan (or a similar-sized baking sheet) with parchment paper.

2. In a large mixing bowl, beat the eggs and sugar together using an electric mixer until the mixture becomes pale yellow and thick, about 5 minutes.

3. In a separate bowl, sift together the flour, baking powder, and salt.

4. Gently fold the dry ingredients into the egg mixture until well combined.

5. Add the mashed bananas and vanilla extract to the batter and mix until evenly incorporated.

6. Pour the batter into the prepared pan, spreading it out evenly with a spatula.

7. Bake for 12-15 minutes, or until the cake springs back when lightly pressed and the edges are lightly golden.

8. While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.

9. Once the cake is done, immediately turn it out onto the prepared towel. Remove the parchment paper and carefully roll up the cake in the towel, starting from the shorter side. Place the rolled cake on a wire rack to cool completely.

10. In the meantime, prepare the filling by whipping the heavy cream, powdered sugar, and vanilla extract together in a large bowl using an electric mixer. Whip until stiff peaks form.
