French onion chicken

4 8-oz Boneless skinless chicken breasts
2 tsp Sea salt
1/4 tsp Black pepper
1 tbsp Olive oil
2 tbsp Unsalted butter
3 small White onions (or 1 1/2 large ones; peeled and sliced)
1 tsp Fresh thyme leaves
1/2 cup White wine
1/2 cup Chicken broth, reduced sodium
4 slices Swiss cheese
1/3 cup Parmesan cheese (shredded)
